It is called hobo stew because you can do anything with it, but here is a recipe for what I usually use but you can add whatever leftover veggies you have at the end of the week.
- Cut up Potatoes (with or without peel)
- broccoli
- Italian Cut green beans
- Onion
- Pepper
- Garlic Poweder
- Eckrich Italian Sausage
First cut the sausage and fry it in a pan for a bit to give it flavor and brown it. Then add all the ingredients into a 9 by 13 pan. Mix together. Pour 2 cans of Cream of Mushroom Soup over top and put it in the oven at 375 for 45 minutes. Test the potatoes before pulling out!
