Chicken Chili

There is nothing I love better than Fall and Football! The weather here in Indiana is nothing like fall but we still have football games to enjoy! The Happy Housewife is running a contest to win a tailgating basket from Frito Lay. I am certain that my mom's Chicken Chili recipe is the best Chicken Chili out there! So here it is.....

White Bean Chicken Chili

3 cans Low Sodium Chicken Broth
2 cans Northern Beans (Drained)
1 (16oz) Jar of Salsa
1 pkg. frozen spinach (Thawed and Drained)
4 chicken breasts (Thawed, Whole)
Monterrey Jack Cheese (add in at the end)
Tostidos Tortilla chips Crumbled on top or for dipping!

Dump it all in the crockpot and cook on low for 6 hours or high for 4. The chicken will begin to shred which is what you want it to do. The batch that you had the chicken didn't shred very well. If it doesn't start shredding take it out and help it along with a fork and knife.

ENJOY! It is sometimes better the 2nd day warmed up :)
