Grocery Cart Challenge::Recipe Swap::Black Bean and Sweet Potato Quesadillas

A few months ago I purchased the cookbook Simply In Season and we are just now getting around to trying some of the recipes. We started with this one and it was DELICIOUS!

Black Bean and Sweet Potato Quesadillas

1 25oz can of black beans (warmed on the stove or in the microwave)
2 large sweet potato (cooked then shredded)
6 whole wheat tortillas
1 onion, chopped small
3 cloves of garlic
2 teaspoons oregano
1.5 teaspoon chili powder
1.5 teaspoon basil.
Bunch of cheddar cheese

Preheat oven to 400 degrees. Cook the sweet potato and shred it. In a skillet saute onion and garlic, add seasonings and then add the sweet potato. Place tortillas on a baking sheet top with sweet potato mixture, black beans and cheddar cheese. Bake for 10 minutes. Fold over to make a quesadilla and enjoy with salsa and/or sour cream!
