Friday Recipe Swap - Pumpkin Surprise

This is the perfect pumpkin pie alternative. It is always a big hit with the kids because they love putting a ton of cool whip on it. It works great for parties and potlucks!

Preheat your oven to 350 degrees

1 Box Yellow Cake Mix (set aside one cup)
½ Cup melted unsalted butter
1 egg
* mix together – smooth into greased 9 x 13 pan *

1 large can pumpkin pie mix
2 eggs
2/3 Cup Milk
* mix together and pour over cake mix *

1 Cup cake mix (set aside from earlier)
¼ Cup sugar
¼ Cup softened unsalted butter
1 tsp. cinnamon
* mix together and crumble over top *

Bake 40-50 minutes
Cool and Serve with cool whip

I just made something like this with no bottom crust and the entire cake mix on top. It was excellent!!
